Ingredients
Butterscotch Sauce
- ¼ cup unsalted butter
- ¼ cup dark brown sugar, packed
- ½ cup heavy cream
- ¼ teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 teaspoon Scotch whiskey (optional)
Shake
- ¼ cup milk
- 2 cups vanilla ice cream (can substitute frozen yogurt or a small frozen sliced banana)
- 2 tablespoons butterscotch sauce (prepared above)
- Whipped cream (optional, for topping)
- Butterscotch chips, chopped (optional, for topping)
Instructions
- Make Butterscotch Sauce: In a medium saucepan, melt the unsalted butter over medium heat until fully melted.
- Add sugar: Stir in the packed dark brown sugar and bring the mixture to a boil. Then reduce to a slow and steady boil and cook for 2-3 minutes, stirring frequently to avoid burning.
- Add heavy cream and salt: Carefully pour in the heavy cream and sprinkle in the kosher salt. Stir to combine and bring the mixture back to a slow boil. Continue stirring and cook for an additional 3-4 minutes until thickened.
- Finish sauce: Remove the saucepan from heat and stir in the vanilla extract and optional Scotch whiskey. Set the sauce aside to cool, during which it will thicken further.
- Prepare shake ingredients: In a large blender, add milk first, followed by vanilla ice cream and the cooled butterscotch sauce.
- Blend: Blend the ingredients on high speed until the shake is smooth and creamy in texture.
- Serve: Pour the shake into a chilled glass. Optionally, top with whipped cream, chopped butterscotch chips, and a drizzle of extra butterscotch sauce to add richness and visual appeal.
Notes
- The Scotch whiskey adds a subtle warmth and complexity but can be omitted for a non-alcoholic version.
- Frozen banana or frozen yogurt can be used as healthier or dairy-light alternatives to ice cream.
- Make sure to stir the butterscotch sauce frequently to prevent burning.
- For an extra thick shake, use less milk or add more ice cream.
- Chilling the glass before serving helps keep the shake cold longer.
