Ingredients

Butterscotch Sauce

  • ¼ cup unsalted butter
  • ¼ cup dark brown sugar, packed

  • 1 teaspoon Scotch whiskey (optional)

Shake

  • ¼ cup milk
  • 2 cups vanilla ice cream (can substitute frozen yogurt or a small frozen sliced banana)
  • 2 tablespoons butterscotch sauce (prepared above)

  • Butterscotch chips, chopped (optional, for topping)


Instructions

  1. Make Butterscotch Sauce: In a medium saucepan, melt the unsalted butter over medium heat until fully melted.
  2. Add sugar: Stir in the packed dark brown sugar and bring the mixture to a boil. Then reduce to a slow and steady boil and cook for 2-3 minutes, stirring frequently to avoid burning.
  3. Add heavy cream and salt: Carefully pour in the heavy cream and sprinkle in the kosher salt. Stir to combine and bring the mixture back to a slow boil. Continue stirring and cook for an additional 3-4 minutes until thickened.
  4. Finish sauce: Remove the saucepan from heat and stir in the vanilla extract and optional Scotch whiskey. Set the sauce aside to cool, during which it will thicken further.
  5. Prepare shake ingredients: In a large blender, add milk first, followed by vanilla ice cream and the cooled butterscotch sauce.
