Ingredients
For the Butter Roasted Chicken:
1 whole chicken (about 3–4 lbs)
4 tbsp unsalted butter, melted
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
1 lemon, halved
Fresh rosemary (optional)
For the Grit Waffles:
1 cup stone-ground grits
4 cups water
1 cup shredded sharp cheddar cheese
2 tbsp unsalted butter
1/2 tsp garlic powder
Salt and pepper to taste
2 large eggs
1 cup milk
2 tsp baking powder
1/4 cup chopped green onions (optional)
Instructions
For the Butter Roasted Chicken:

Preheat the oven to 400°F (200°C).

Pat the chicken dry with paper towels and place it on a roasting rack inside a baking pan.

Rub the melted butter all over the chicken.

Sprinkle garlic powder, onion powder, thyme, paprika, salt, and pepper evenly over the chicken.
