Ingredients

For the Butter Roasted Chicken:

1 whole chicken (about 34 lbs)

4 tbsp unsalted butter, melted

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

1 lemon, halved

Fresh rosemary (optional)

For the Grit Waffles:

1 cup stone-ground grits

4 cups water

1 cup shredded sharp cheddar cheese

2 tbsp unsalted butter

1/2 tsp garlic powder

Salt and pepper to taste

2 large eggs

1 cup milk

2 tsp baking powder

1/4 cup chopped green onions (optional)


Instructions

For the Butter Roasted Chicken:

  1. Preheat the oven to 400°F (200°C).

  2. Pat the chicken dry with paper towels and place it on a roasting rack inside a baking pan.

  3. Rub the melted butter all over the chicken.

  4. Sprinkle garlic powder, onion powder, thyme, paprika, salt, and pepper evenly over the chicken.

  5. Stuff the cavity of the chicken with the halved lemon and fresh rosemary (optional).

  6. Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.

  7. Let the chicken rest for 10 minutes before carving

  • You can prep the chicken the night before by seasoning it and refrigerating until ready to roast.

  • For a richer waffle, add more cheese to the grits mixture.
