Description

This Buffalo Chicken Cauliflower Casserole offers all the spicy, creamy goodness of buffalo wings in a healthier, low-carb form. Packed with shredded chicken, zesty buffalo sauce, and creamy cheese, this casserole is perfect for keto or low-carb diets, and it’s simple to prepare for a quick dinner or meal prep. With cauliflower acting as a nutritious substitute for traditional carbs, this dish is a comforting yet healthy choice for any occasion.

Ingredients

1 lb cooked chicken (shredded)

1 medium cauliflower, chopped into florets

1/2 cup buffalo sauce

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray.

In a large pot, bring water to a boil. Add cauliflower florets and cook for about 5-7 minutes until tender. Drain and set aside.

In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, sour cream, garlic powder, onion powder, and half of the shredded cheddar and mozzarella cheese. Mix until smooth.

Gently fold in the cauliflower florets, ensuring they are well coated with the mixture.

Transfer the mixture to the casserole dish and spread evenly.

Top with the remaining cheddar and mozzarella cheese.

Bake for 20-25 minutes or until cheese is melted and bubbly.

Garnish with chopped parsley and serve

Notes

  • For extra vegetables, add spinach, bell peppers, or zucchini.

  • Adjust the level of spice by adding more buffalo sauce or jalapeños.

  • You can substitute cream cheese with Greek yogurt or low-fat cream cheese for a lighter version.
