Description

These Buffalo Cauliflower Bites are a crispy, spicy, and healthy alternative to traditional buffalo wings. Perfect as a snack or appetizer, these bites are coated in a zesty buffalo sauce, offering a satisfying crunch and bold flavors. Whether you’re serving them for a party, family meal, or craving a delicious vegetarian treat, they’ll surely become a favorite.

Ingredients

1 head of cauliflower, cut into florets

1 cup all-purpose flour

1 cup unsweetened almond milk (or milk of choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Ranch or blue cheese dressing for dipping (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.

  • In a large bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper to create the batter.

  • Dip each cauliflower floret into the batter, ensuring it’s evenly coated. Place the coated florets on the prepared baking sheet.

  • Drizzle the olive oil over the cauliflower bites.

  • Bake for 20-25 minutes, or until the cauliflower is crispy and golden brown.

  • While the cauliflower is baking, heat the buffalo sauce in a small saucepan over medium heat until warmed through.

  • Once the cauliflower bites are done, remove them from the oven and toss them in the buffalo sauce until fully coated.

  • Serve with ranch or blue cheese dressing for dipping and enjoy!

Notes

  • For a vegan version, use plant-based milk and vegan ranch or blue cheese.

  • Add cayenne pepper or chili powder to the batter for extra heat.

  • For a sweet and spicy twist, mix honey or maple syrup into the buffalo sauce.

  • Air frying is an option for a quicker and crispier result.
