Description

Buckeye Balls are no-bake peanut butter balls coated in rich chocolate, inspired by the Ohio State candy. These bite-sized treats are perfect for parties, holiday gifts, or anytime you want a sweet indulgence.


Ingredients

  1. 1 cup creamy peanut butter
  2. 1 1/2 cups powdered sugar
  3. 1/2 cup unsalted butter, softened
  4. 1 teaspoon vanilla extract
  5. 2 cups semisweet chocolate chips
  6. 1 tablespoon vegetable oil or coconut oil

Instructions

In a large bowl, combine peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until smooth and creamy, using your hands if needed.

  1. Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place on a parchment-lined baking sheet.
  2. Chill the peanut butter balls in the refrigerator for 30 minutes to an hour until firm.
  3. In a heatproof bowl, melt the chocolate chips with vegetable oil or coconut oil. Stir until smooth.
  4. Using a toothpick or fork, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top. Tap off any excess chocolate and place the balls back on the baking sheet.
  5. Chill the chocolate-coated peanut butter balls for another 30 minutes or until the chocolate is set.
  6. Serve and enjoy! Store any leftovers in an airtight container in the refrigerator.

Notes

  1. For a sweet-salty contrast, sprinkle a little sea salt on top of the chocolate before it hardens.
  2. Use milk chocolate instead of semisweet for a creamier flavor.
  3. Mix chopped peanuts or other nuts into the filling for extra crunch.
  4. To make them vegan, use dairy-free chocolate and vegan butter.
