1 cup of butter, melted
1 cup of granulated sugar
1 cup of brown sugar, packed
2 large eggs
2 teaspoons of vanilla extract
1 ¾ cups of all-purpose flour
¾ cup of cocoa powder
1 teaspoon of baking powder
½ teaspoon of salt
1 cup of chocolate chips (optional)
Instructions
-
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
 -
In a large bowl, mix the melted butter, granulated sugar, and brown sugar until well combined.
 -
Add the eggs, one at a time, and vanilla extract, mixing after each addition.
 -
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
 -
Gradually add the dry ingredients into the wet ingredients, stirring until fully combined.
 -
Fold in the chocolate chips if using.
 -
Drop spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
 -
Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
 -
Allow the brookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes
-
If desired, add mix-ins like nuts, peanut butter, mint chocolate, or caramel for a fun twist.
 -
For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
 -
Store brookies in an airtight container at room temperature for 4-5 days, or refrigerate for up to a week.
