Ingredients

Bread

  • 4 thick slices hearty artisan bread

Ricotta Mixture

  • 12 ounces ricotta cheese
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 2-3 tablespoons honey (divided)

Oranges

  • 2 Cara Cara oranges
  • 2 blood oranges

Toppings

  • 1/4 cup raw almonds, roughly chopped
  • 4 sprigs fresh mint leaves
  • 1 tablespoon sea salt flakes


Instructions

  1. Whip Ricotta: In the bowl of a stand mixer fitted with a whisk attachment, combine the ricotta cheese, 1 tablespoon of honey, and vanilla bean paste or extract. Whisk for 2-3 minutes until the mixture is smooth, light, and airy. Refrigerate the whipped ricotta until ready to use. If you don’t have a mixer, whisk vigorously by hand to achieve similar texture.
  2. Toast Bread: Grill or toast the thick slices of artisan bread until they reach your preferred level of toasty crispness. Set aside to cool slightly.
  3. Prepare Oranges: Using a mandoline or a sharp knife, carefully slice the Cara Cara and blood oranges into 1/4-inch thick slices. Remove the peel and pith completely so that only the juicy orange segments remain. Arrange the orange slices on a foil-lined baking sheet and gently brush the tops with the remaining honey.
  4. Broil Oranges: Preheat your oven’s broiler setting. Place the baking sheet under the broiler for 3-5 minutes, watching carefully until the honey bubbles and caramelizes and the edges of the orange slices start to blacken slightly. Remove and allow the oranges to cool for a few minutes.
  5. Assemble Toasts: Spread the whipped ricotta evenly over each toasted bread slice. Sprinkle chopped raw almonds on top, then layer the broiled orange slices. Garnish with fresh mint leaves and sprinkle sea salt flakes over the toasts. Optionally, drizzle additional honey for more sweetness. Serve immediately.
