Ingredients

1 lb boneless, skinless chicken breasts or thighs

1 tablespoon olive oil

1 cup chopped carrots

1 cup chopped celery

1 small yellow onion, diced

2 garlic cloves, minced

4 cups chicken bone broth

2 cups water

1/2 teaspoon salt

1/2 teaspoon dried thyme

1/4 teaspoon ground black pepper

1/8 teaspoon cayenne pepper (optional)

1 cup cooked rice, farro, or egg noodles (optional)

Fresh parsley or dill, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add carrots, celery, and onion. Sauté for 5 minutes until softened.

  3. Stir in garlic, thyme, salt, pepper, and cayenne (if using). Cook 1 minute.

  4. Pour in bone broth and water. Stir to combine.

  5. Add whole chicken breasts or thighs. Bring to a gentle boil.

  6. Reduce heat and simmer partially covered for 30–40 minutes until chicken is tender.

  7. Remove chicken, shred or chop, and return to the pot.

  8. Stir in cooked grains or noodles if using.

  9. Adjust seasoning to taste. Garnish with fresh parsley or dill and serve hot.
