Description

These Blueberry Oatmeal Breakfast Bars combine wholesome rolled oats, flour, and a sweet blueberry filling into a delicious, crumbly treat perfect for a nutritious breakfast or snack. With a buttery oat crust and a luscious layer of fresh or frozen blueberries, these bars offer a satisfying balance of flavors and textures.

Ingredients

Oatmeal Base and Topping

  • 2 1/4 cups Old Fashioned rolled oats
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 cup butter (2 sticks), melted
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Blueberry Filling

  • 3 cups blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 1 tablespoon corn starch

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s at the right temperature for baking the bars evenly.
  2. Prepare Oatmeal Mixture: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Melt the butter and pour it over the dry ingredients. Mix everything together until you get a crumbly, well-incorporated mixture.
  3. Form the Crust: Press about two-thirds of the oatmeal mixture firmly into the bottom of a 9×13 inch baking pan to form the base crust, leaving the remaining third for the topping.
  4. Mix Blueberry Filling: In a separate bowl, combine the blueberries with granulated sugar and corn starch. Stir until the blueberries are evenly coated, which will help thicken the filling during baking.
  5. Assemble the Bars: Pour the blueberry mixture evenly over the oatmeal crust in the pan. Then, crumble the reserved one-third oatmeal mixture evenly over the blueberries as a topping.
  6. Bake: Place the pan in the preheated oven and bake the bars for 20 to 25 minutes until the topping is golden brown and the filling is bubbling.
  7. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan to set properly before cutting into 18 servings.

Notes

  • Use fresh or frozen blueberries interchangeably based on availability; if using frozen, do not thaw before mixing.
  • Pressing the crust firmly helps create a more stable base that holds together after baking.
  • Ensure the bars are fully cooled before slicing to prevent crumbling.
  • For a nutty twist, add chopped walnuts or pecans to the oat mixture.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
