Ingredients
Oatmeal Base and Topping
- 2 1/4 cups Old Fashioned rolled oats
- 2 1/4 cups all-purpose flour
- 1 1/2 cups brown sugar
- 1 cup butter (2 sticks), melted
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
Blueberry Filling
- 3 cups blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 1 tablespoon corn starch
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s at the right temperature for baking the bars evenly.
- Prepare Oatmeal Mixture: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Melt the butter and pour it over the dry ingredients. Mix everything together until you get a crumbly, well-incorporated mixture.
- Form the Crust: Press about two-thirds of the oatmeal mixture firmly into the bottom of a 9×13 inch baking pan to form the base crust, leaving the remaining third for the topping.
- Mix Blueberry Filling: In a separate bowl, combine the blueberries with granulated sugar and corn starch. Stir until the blueberries are evenly coated, which will help thicken the filling during baking.
- Assemble the Bars: Pour the blueberry mixture evenly over the oatmeal crust in the pan. Then, crumble the reserved one-third oatmeal mixture evenly over the blueberries as a topping.
- Bake: Place the pan in the preheated oven and bake the bars for 20 to 25 minutes until the topping is golden brown and the filling is bubbling.
- Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan to set properly before cutting into 18 servings.
Notes
- Use fresh or frozen blueberries interchangeably based on availability; if using frozen, do not thaw before mixing.
- Pressing the crust firmly helps create a more stable base that holds together after baking.
- Ensure the bars are fully cooled before slicing to prevent crumbling.
- For a nutty twist, add chopped walnuts or pecans to the oat mixture.
- Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
