Ingredients
4 cups fresh blueberries
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, cold and cubed
½ cup whole milk
1 tablespoon granulated sugar (for sprinkling on top)
Instructions
-
Preheat the oven to 375°F (190°C) and grease a 9-inch baking dish.
 -
In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Toss until the blueberries are well coated and transfer to the prepared baking dish.
 -
In another bowl, whisk together the flour, baking powder, and salt.
 -
Add cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter until it resembles coarse crumbs.
 -
Pour in the milk and stir until just combined. Avoid overmixing.
 -
Drop spoonfuls of batter over the blueberries, covering most of the surface. Sprinkle the tablespoon of sugar over the top.
 -
Bake for 35-40 minutes until the topping is golden brown and the blueberries are bubbly.
 -
Let the cobbler cool slightly before serving.

Notes
-
Frozen Blueberries: If using frozen blueberries, increase cornstarch by 1 tablespoon to help thicken the fruit juices.
 -
Vegan Option: Use plant-based butter and almond or coconut milk for a vegan version.
 -
Gluten-Free Option: Swap all-purpose flour for a gluten-free flour blend.
 -
Fruit Variations: Try swapping blueberries for raspberries, strawberries, peaches, or a mix of fruits.
 -
Topping Variations: For added texture, include oats or chopped nuts in the topping.
