Ingredients

4 cups fresh blueberries

1 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, cold and cubed

½ cup whole milk

1 tablespoon granulated sugar (for sprinkling on top)


Instructions

  • Preheat the oven to 375°F (190°C) and grease a 9-inch baking dish.

  • In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Toss until the blueberries are well coated and transfer to the prepared baking dish.

  • In another bowl, whisk together the flour, baking powder, and salt.

  • Add cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter until it resembles coarse crumbs.

  • Pour in the milk and stir until just combined. Avoid overmixing.

  • Drop spoonfuls of batter over the blueberries, covering most of the surface. Sprinkle the tablespoon of sugar over the top.

  • Bake for 35-40 minutes until the topping is golden brown and the blueberries are bubbly.

  • Let the cobbler cool slightly before serving.
