Description

Blender Banana Muffins are soft, fluffy, and naturally sweetened treats made entirely in a blender. They’re quick to prepare, wholesome, and perfect for breakfast, snacks, or using up overripe bananas.


Ingredients

  1. 3 ripe bananas
  2. 2 large eggs
  3. 2 cups rolled oats (or 2 cups oat flour)
  4. 1 tsp baking powder
  5. 1/2 tsp baking soda
  6. 1 tsp vanilla extract
  7. 23 tbsp honey or maple syrup (optional)
  8. 1/4 tsp salt
  9. Optional add-ins: 1/2 cup chocolate chips, nuts, or berries


Instructions

Preheat oven to 350°F (175°C) and line or grease a 12-cup muffin tin.

  1. Add bananas, eggs, oats, baking powder, baking soda, vanilla, sweetener (if using), and salt to a blender.
  2. Blend until the batter is smooth and creamy.
  3. Stir in any optional mix-ins like chocolate chips, nuts, or berries.
  4. Pour batter into muffin cups, filling each about 3/4 full.
  5. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool for 5 minutes in the tin before transferring to a wire rack.

Notes

  • For gluten-free muffins, use certified gluten-free oats.
