Bisquick mix blueberry cobbler is a fast and comforting dessert featuring juicy blueberries and a fluffy, golden biscuit-like topping. Using Bisquick makes it incredibly easy to whip up, perfect for weeknights, summer get-togethers, or cozy nights in.
Ingredients
- 1 cup Bisquick baking mix
- 1/2 cup granulated sugar (plus 2 tbsp for blueberries)
- 1/2 cup milk
- 2 tbsp butter, melted
- 2 cups fresh or frozen blueberries
- 1 tsp lemon juice (optional)
- 1/4 tsp ground cinnamon (optional)
Instructions
Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.
- In a bowl, stir together Bisquick, 1/2 cup sugar, milk, and melted butter until just combined.
- In a separate bowl, toss blueberries with 2 tbsp sugar and lemon juice if using.
- Pour the batter into the prepared baking dish and spread evenly.
- Spoon the blueberry mixture evenly over the batter. Do not stir.
- Sprinkle cinnamon on top if desired.
- Bake for 40–45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes before serving. Serve warm with ice cream or whipped cream if desired.
Notes
- Use frozen blueberries straight from the freezer—no need to thaw.
- Don’t stir the batter and blueberries to achieve the best cobbler texture.
- Sprinkle coarse sugar on top before baking for extra crunch.
- This recipe can be easily doubled for a larger crowd.
