Description

Bisquick mix blueberry cobbler is a fast and comforting dessert featuring juicy blueberries and a fluffy, golden biscuit-like topping. Using Bisquick makes it incredibly easy to whip up, perfect for weeknights, summer get-togethers, or cozy nights in.


Ingredients

  1. 1 cup Bisquick baking mix
  2. 1/2 cup granulated sugar (plus 2 tbsp for blueberries)
  3. 1/2 cup milk
  4. 2 tbsp butter, melted
  5. 2 cups fresh or frozen blueberries
  6. 1 tsp lemon juice (optional)
  7. 1/4 tsp ground cinnamon (optional)

Instructions

Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.

  1. In a bowl, stir together Bisquick, 1/2 cup sugar, milk, and melted butter until just combined.
  2. In a separate bowl, toss blueberries with 2 tbsp sugar and lemon juice if using.
  3. Pour the batter into the prepared baking dish and spread evenly.
  4. Spoon the blueberry mixture evenly over the batter. Do not stir.
  5. Sprinkle cinnamon on top if desired.
  6. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Let cool for 10 minutes before serving. Serve warm with ice cream or whipped cream if desired.

Notes

  1. Use frozen blueberries straight from the freezer—no need to thaw.
  2. Don’t stir the batter and blueberries to achieve the best cobbler texture.
  3. Sprinkle coarse sugar on top before baking for extra crunch.
  4. This recipe can be easily doubled for a larger crowd.
  5. Add lemon zest to brighten the flavor.
