Description

These Birthday Cake Cookies are a fun and easy treat made with confetti cake mix, vegetable oil, and eggs. With colorful sprinkles on top, they offer a delightful burst of sweetness and a festive appearance perfect for celebrations or any day you crave a cheerful cookie.

Ingredients

Cookie Dough

  • 1 (15.25 ounce) confetti cake mix (such as Funfetti)
  • 1/2 cup vegetable oil
  • 2 large eggs

Topping

  • 1/4 cup sprinkles (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375˚F (190˚C) to ensure it reaches the proper baking temperature before placing the cookies inside.
  2. Mix Ingredients: In a large bowl, combine the confetti cake mix, vegetable oil, and eggs. Use an electric mixer or mix by hand until the dough is smooth and well incorporated.
  3. Shape Cookies: Using a rounded tablespoon, scoop portions of the cookie dough onto a baking sheet, spacing them about 2 inches apart to allow for spreading during baking.
  4. Add Sprinkles: Gently press a few sprinkles on top of each portion of cookie dough for added color and texture.
  5. Bake Cookies: Place the baking sheet in the oven and bake the cookies for 9 to 10 minutes, or until the cookies appear set and are no longer shiny on top.
  6. Cool Cookies: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 2 to 3 minutes to firm up, then transfer them to a wire cooling rack to cool completely.

Notes

  • For best results, do not overmix the dough to prevent tough cookies.
  • Sprinkles are optional but add a fun pop of color and sweetness.
  • You can store baked cookies in an airtight container at room temperature for up to 3 days.
  • If you prefer gluten-free, use a gluten-free cake mix alternative.
