Description

Berry Bliss Cottage Cheese Ice Cream is a creamy, protein-rich no-churn dessert made by blending cottage cheese with mixed berries, honey or maple syrup, and vanilla. It’s a healthy, refreshing treat perfect for warm days or guilt-free indulgence.

Ingredients

  1. 2 cups full-fat cottage cheese
  2. 1/4 cup honey or maple syrup (adjust to taste)
  3. 1 tsp vanilla extract
  4. 1 1/2 cups mixed berries (fresh or frozen)
  5. Optional: 1 tsp lemon zest or 1 tbsp lemon juice
  6. Optional toppings: dark chocolate chips, granola, or extra berries

Instructions

In a high-speed blender or food processor, combine the cottage cheese, honey or maple syrup, and vanilla extract.

  1. Blend until completely smooth and creamy.
  2. Add the mixed berries and blend until well incorporated. For texture, blend partially and stir in some whole berries.
  3. Taste and adjust sweetness if needed.
  4. Pour the mixture into a loaf pan or freezer-safe container.
  5. Cover and freeze for at least 4 hours or until firm.
  6. Before serving, let the ice cream sit at room temperature for 10–15 minutes to soften.
  7. Scoop into bowls or cones and add optional toppings like chocolate chips, granola, or more berries.

Notes

  1. Use full-fat cottage cheese for the best creamy texture.
  2. Let the ice cream sit out before serving for easier scooping.
  3. Customize the flavor with different fruits or mix-ins.
  4. Add a splash of vodka before freezing to improve scoopability without altering taste.
