Description

Beef Taco Skillet with Rice is a quick, one-pan meal that combines seasoned ground beef, fluffy rice, and classic taco flavors. This easy recipe is perfect for busy weeknights, delivering a comforting and flavorful dish the whole family will enjoy.

Ingredients

  1. 1 pound ground beef
    1 small onion, diced
    3 cloves garlic, minced
    1 cup long-grain white rice
1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) black beans, drained and rinsed (optional)
    1 cup beef broth
    2 tablespoons taco seasoning
    1 cup shredded cheddar cheese
    Salt and pepper to taste
Optional toppings: sour cream, sliced avocado, chopped cilantro, jalapeños, salsa

Instructions

Cook Beef: In a large skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and onions are softened. Drain excess fat.

  1. Add Seasoning: Stir in taco seasoning, diced tomatoes with juice, black beans (if using), and beef broth.
  2. Add Rice: Stir in rice, making sure it’s evenly distributed. Season with salt and pepper.
  3. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
  4. Add Cheese: Sprinkle shredded cheese over the top. Cover and let sit for 5 minutes until cheese melts.
  5. Serve: Fluff the rice and serve with your favorite taco toppings.

Notes

  1. Vegetables: Add bell peppers, corn, or zucchini for extra nutrition.
  2. Spicy: Add diced jalapeños or hot sauce for heat.
  3. Different Rice: Use brown rice (increase cooking time) or cauliflower rice for a low-carb version.
  4. Cheese Options: Try pepper jack, Monterey Jack, or a cheese blend.
