Ingredients
- 1 pound ground beef
1 small onion, diced
3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) black beans, drained and rinsed (optional)
1 cup beef broth
2 tablespoons taco seasoning
1 cup shredded cheddar cheese
Salt and pepper to taste

Instructions
Cook Beef: In a large skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and onions are softened. Drain excess fat.
- Add Seasoning: Stir in taco seasoning, diced tomatoes with juice, black beans (if using), and beef broth.
- Add Rice: Stir in rice, making sure it’s evenly distributed. Season with salt and pepper.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
