Ingredients
For the Chicken Skewers:
- 1 ½ lbs (680g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- Wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tbsp honey
- 1 tsp lime juice
Instructions
Prepare the Chicken:
1️⃣ In a large bowl, mix olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and black pepper.
2️⃣ Add chicken pieces, tossing to coat. Cover and marinate for at least 30 minutes (or up to 4 hours).
Make the Bang Bang Sauce:
3️⃣ In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Set aside.
Assemble the Skewers:
4️⃣ Thread the marinated chicken onto soaked wooden skewers.
Cook the Skewers:
- Grill Method: Preheat grill to medium-high heat. Cook for 10-12 minutes, turning occasionally, until the internal temp reaches 165°F (75°C).
- Oven Method: Preheat oven to 400°F (200°C). Place skewers on a baking sheet and bake for 20-25 minutes, flipping halfway.
- Air Fryer Method: Preheat air fryer to 375°F (190°C). Cook for 10-12 minutes, flipping halfway.
Serve:
