Description

Banana Oatmeal Muffins are a wholesome and delicious treat that combines the natural sweetness of ripe bananas with the hearty goodness of oats. Perfect for breakfast or a midday snack, these muffins are soft, nutritious, and customizable with various add-ins.

Ingredients

  1. 2 ripe bananas, mashed
    1/2 cup rolled oats
    1 cup whole wheat flour
1/2 cup granulated sugar (or honey for a natural sweetener)
1/4 cup milk (dairy or non-dairy)
1/4 cup vegetable oil or melted butter
    2 large eggs
    1 teaspoon vanilla extract
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon cinnamon
    1/4 teaspoon salt

Instructions

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.

  1. In a large mixing bowl, combine the mashed bananas, milk, oil (or melted butter), eggs, and vanilla extract. Stir until well combined.
  2. In a separate bowl, whisk together the whole wheat flour, oats, sugar, baking soda, baking powder, cinnamon, and salt.
  3. Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.
  4. Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  6. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  1. Overripe bananas are perfect for this recipe as they add natural sweetness and softness.
  2. For a vegan version, replace the eggs with flax eggs and use a non-dairy milk.
  3. For a gluten-free version, use a gluten-free flour blend and certified gluten-free oats.
  4. Add-ins like chocolate chips, nuts, or dried fruit can be stirred into the batter for extra flavor and texture.
  5. If you want moister muffins, add a tablespoon of yogurt or applesauce.
