Ingredients
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 cup buttermilk or sour cream
- 1 teaspoon vanilla extract
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 1 tub (8 oz) whipped topping or stabilized whipped cream
- 2 bananas, sliced (for filling)
- Optional: crushed vanilla wafers or banana slices for garnish
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a 9×13-inch pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine eggs, mashed bananas, oil (or butter), buttermilk (or sour cream), and vanilla extract.
- Stir wet ingredients into the dry ingredients until just combined.
- Pour batter into prepared pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare pudding: whisk vanilla pudding mix with cold milk until thickened.
- Place one cake layer on a serving plate. Spread with half the pudding and top with banana slices.
- Add second cake layer and frost the top and sides with whipped topping.
- Chill the cake for 1–2 hours before serving. Garnish with crushed vanilla wafers or banana slices, if desired.

- Use banana pudding mix for more intense banana flavor.
- Toss banana slices in lemon juice to prevent browning.
