Ingredients

  • 2/3 cup sugar (113g)
  • 1 cup semisweet chocolate chips (plus more for topping, if desired)

Wet Ingredients

  • 3 medium ripe bananas (or 1 cup mashed banana)
  • 1/3 cup melted butter, slightly cooled (75g)
  • 1 large egg
  • 1 teaspoon vanilla extract (5ml)


Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners to prevent sticking and for easy cleanup.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking soda, salt, and sugar until well combined. Set this mixture aside.
  3. Combine Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly. Add the egg, melted butter, and vanilla extract. Mix everything together until the wet ingredients are fully blended.
  4. Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet banana mixture. Fold gently with a spatula until the batter is almost combined. Then fold in the semisweet chocolate chips evenly throughout the batter.
