- 2/3 cup sugar (113g)
- 1 cup semisweet chocolate chips (plus more for topping, if desired)
Wet Ingredients
- 3 medium ripe bananas (or 1 cup mashed banana)
- 1/3 cup melted butter, slightly cooled (75g)
- 1 large egg
- 1 teaspoon vanilla extract (5ml)
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners to prevent sticking and for easy cleanup.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking soda, salt, and sugar until well combined. Set this mixture aside.
- Combine Wet Ingredients: In a large bowl, mash the ripe bananas thoroughly. Add the egg, melted butter, and vanilla extract. Mix everything together until the wet ingredients are fully blended.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet banana mixture. Fold gently with a spatula until the batter is almost combined. Then fold in the semisweet chocolate chips evenly throughout the batter.
- Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin cups. Optionally, sprinkle additional chocolate chips on top of each muffin for extra chocolate flavor.
- Bake: Bake the muffins in the preheated oven at 375°F for 17-20 minutes, or until a toothpick inserted into the center comes out clean, indicating they are fully baked.
