Description

Banana Bread Cookies are soft, chewy treats that combine the warm flavors of classic banana bread with the convenience of a cookie. They’re perfect for breakfast, dessert, or a wholesome snack.

Ingredients

  1. 2 ripe bananas (mashed)
  2. 1/2 cup unsalted butter (softened)
  3. 1/2 cup brown sugar
  4. 1/4 cup granulated sugar
  5. 1 large egg
  6. 1 teaspoon vanilla extract
  7. 1 1/2 cups all-purpose flour
  8. 1/2 teaspoon baking soda
  9. 1/4 teaspoon salt
  10. 1 teaspoon ground cinnamon
  11. Optional: 1/2 cup rolled oats
  12. Optional: 1/2 cup chocolate chips
  13. Optional: 1/2 cup chopped walnuts or pecans

Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Mix in the mashed bananas, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in any optional mix-ins like oats, chocolate chips, or nuts.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  1. Use very ripe bananas for best flavor and moisture.
  2. Chill the dough before baking for a firmer cookie texture.
  3. Gently flatten the dough balls if you prefer a thinner cookie.
  4. Great for breakfast, snacks, or lunchboxes.
