Ingredients
Cake:
- 1 Cup Sugar
- 1/2 Cup Brown Sugar
- 1 Cup Sour Cream
- 1/2 Cup Soft Butter
- 2 Eggs
- 2 teaspoons Vanilla Extract or Paste
- 2 Cups All Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 Cup Chopped Pecans or Walnuts
- 1/2 teaspoon Cinnamon
- 1/8 teaspoon Nutmeg
- 4 Extra Ripe Bananas, smooshed
Frosting:
- 1/4 Cup Softened Butter
- 8 ounces Cream Cheese
- Pinch Salt
- 1 teaspoon Vanilla Extract or Paste
- 3-4 Cups Powdered Sugar
- 1-2 teaspoons Heavy Cream
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the cake evenly.
- Cream Butter and Sugars: In a mixing bowl, cream together the soft butter, sugar, and brown sugar until fluffy.
- Add Wet Ingredients: Mix in the sour cream, eggs, and vanilla extract thoroughly.
- Add Bananas: Stir in the smooshed extra ripe bananas until well incorporated.
- Add Dry Ingredients and Nuts: Add the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chopped pecans or walnuts. Mix until fully combined.
- Prepare Cake Pan: Grease a 9×13 inch cake pan and pour in the batter, spreading it evenly.
- Bake: Bake the cake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Remove the cake from the oven and let it cool completely in the pan on a wire rack before frosting.
- Make Frosting: In a bowl, whip together softened butter, cream cheese, salt, and vanilla extract until smooth and fluffy.
- Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, mixing between each addition until fully integrated.
- Adjust Consistency: Mix in heavy cream, 1-2 teaspoons at a time, to reach your desired frosting consistency. The frosting will firm up once refrigerated.
- Frost Cake: Spread the cream cheese frosting evenly over the cooled cake.
- Store: Store the frosted cake in the refrigerator to keep it fresh and ensure the frosting remains firm.
Notes
- Use very ripe bananas for maximum banana flavor and moist texture.
- You can substitute walnuts or pecans based on preference or omit nuts for a nut-free version.
- Adjust powdered sugar in frosting to achieve your preferred sweetness and thickness.
- Allow the cake to cool completely before frosting to prevent melting.
- Store leftover cake covered in the refrigerator for up to 5 days.
