Description

Deliciously moist Banana Bread Cake topped with a creamy, tangy Cream Cheese Frosting. This easy-to-make cake combines ripe bananas, warm spices, and crunchy nuts into a comforting dessert or snack perfect for any occasion.

Ingredients

Cake:

  • 1 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 Cup Sour Cream
  • 1/2 Cup Soft Butter
  • 2 Eggs
  • 2 teaspoons Vanilla Extract or Paste
  • 2 Cups All Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 Cup Chopped Pecans or Walnuts
  • 1/2 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg
  • 4 Extra Ripe Bananas, smooshed

Frosting:

  • 1/4 Cup Softened Butter
  • 8 ounces Cream Cheese
  • Pinch Salt
  • 1 teaspoon Vanilla Extract or Paste
  • 3-4 Cups Powdered Sugar
  • 1-2 teaspoons Heavy Cream

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the cake evenly.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the soft butter, sugar, and brown sugar until fluffy.
  3. Add Wet Ingredients: Mix in the sour cream, eggs, and vanilla extract thoroughly.
  4. Add Bananas: Stir in the smooshed extra ripe bananas until well incorporated.
  5. Add Dry Ingredients and Nuts: Add the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chopped pecans or walnuts. Mix until fully combined.
  6. Prepare Cake Pan: Grease a 9×13 inch cake pan and pour in the batter, spreading it evenly.
  7. Bake: Bake the cake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Remove the cake from the oven and let it cool completely in the pan on a wire rack before frosting.
  9. Make Frosting: In a bowl, whip together softened butter, cream cheese, salt, and vanilla extract until smooth and fluffy.
  10. Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, mixing between each addition until fully integrated.
  11. Adjust Consistency: Mix in heavy cream, 1-2 teaspoons at a time, to reach your desired frosting consistency. The frosting will firm up once refrigerated.
  12. Frost Cake: Spread the cream cheese frosting evenly over the cooled cake.
  13. Store: Store the frosted cake in the refrigerator to keep it fresh and ensure the frosting remains firm.

Notes

  • Use very ripe bananas for maximum banana flavor and moist texture.
  • You can substitute walnuts or pecans based on preference or omit nuts for a nut-free version.
  • Adjust powdered sugar in frosting to achieve your preferred sweetness and thickness.
  • Allow the cake to cool completely before frosting to prevent melting.
  • Store leftover cake covered in the refrigerator for up to 5 days.
