Description

Banana and Yogurt Peanut Butter Cups are a healthy, bite-sized treat with a creamy peanut butter layer, sweet banana, and tangy yogurt coating, making for a delicious and nutritious snack or dessert.

Ingredients

  1. 1 ripe banana, sliced into rounds
1/2 cup natural peanut butter (creamy or chunky)
1/2 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)
2 tablespoons honey or maple syrup (optional, for sweetness)
    1/2 teaspoon vanilla extract (optional)
    A pinch of salt (optional)

Dark chocolate or milk chocolate (optional for drizzling)

Instructions

Line a muffin tin or small silicone molds with cupcake liners for easy removal.

  1. Place a slice of banana in each liner.
  2. In a small bowl, microwave the peanut butter for 20-30 seconds until it’s soft and easy to spread. Stir in the honey or maple syrup, vanilla extract, and a pinch of salt (if using).
  3. Spoon about 1-2 teaspoons of peanut butter over each banana slice, ensuring it’s evenly spread.
  4. In a separate bowl, mix the yogurt with a little honey or maple syrup for extra sweetness (if desired).
  5. Spoon about 1 tablespoon of yogurt on top of the peanut butter layer, gently smoothing it out to cover the peanut butter and banana.
  6. Optionally, drizzle with melted dark or milk chocolate for added richness and flavor.
  7. Freeze the peanut butter cups for at least 1-2 hours or until the yogurt layer is firm.
  8. Once frozen, remove the cups from the muffin tin or molds and store them in an airtight container in the freezer.
  9. Serve directly from the freezer and enjoy these delicious, healthy treats!

Notes

  • Storage: Store the peanut butter cups in the freezer in an airtight container for up to 2-3 weeks. They are best enjoyed frozen.
  • Reheating: These treats are meant to be eaten straight from the freezer, as they will soften when left at room temperature.
