Banana and Yogurt Peanut Butter Cups are a healthy, bite-sized treat with a creamy peanut butter layer, sweet banana, and tangy yogurt coating, making for a delicious and nutritious snack or dessert.
Ingredients
- 1 ripe banana, sliced into rounds
1/2 cup natural peanut butter (creamy or chunky)
1/2 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)
2 tablespoons honey or maple syrup (optional, for sweetness)
1/2 teaspoon vanilla extract (optional)
A pinch of salt (optional)
Dark chocolate or milk chocolate (optional for drizzling)
Instructions
Line a muffin tin or small silicone molds with cupcake liners for easy removal.
- Place a slice of banana in each liner.
- In a small bowl, microwave the peanut butter for 20-30 seconds until it’s soft and easy to spread. Stir in the honey or maple syrup, vanilla extract, and a pinch of salt (if using).
- Spoon about 1-2 teaspoons of peanut butter over each banana slice, ensuring it’s evenly spread.
- In a separate bowl, mix the yogurt with a little honey or maple syrup for extra sweetness (if desired).
- Spoon about 1 tablespoon of yogurt on top of the peanut butter layer, gently smoothing it out to cover the peanut butter and banana.
- Optionally, drizzle with melted dark or milk chocolate for added richness and flavor.
- Freeze the peanut butter cups for at least 1-2 hours or until the yogurt layer is firm.
- Once frozen, remove the cups from the muffin tin or molds and store them in an airtight container in the freezer.
- Serve directly from the freezer and enjoy these delicious, healthy treats!
