Description

Baked Cod with Parmesan Crust is a simple, healthy, and flavorful dish perfect for a quick weeknight dinner or a special occasion. The flaky cod fillets are topped with a rich and crispy Parmesan crust, creating a satisfying meal that’s low in carbs and easy to prepare. Whether you’re a seafood lover or just looking for a light and elegant dinner option, this recipe delivers a delicious, golden-brown crust and tender fish.

Ingredients

4 cod fillets (about 6 oz each)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

2 tbsp butter, melted

1 tbsp olive oil

2 cloves garlic, minced

1 tsp lemon zest

1 tbsp fresh parsley, chopped

Salt and pepper to taste

Lemon wedges, for serving

Instructions

  • Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil or non-stick spray.

  • In a small bowl, combine the grated Parmesan cheese, breadcrumbs, melted butter, olive oil, minced garlic, lemon zest, parsley, salt, and pepper. Mix until well combined.

  • Place the cod fillets in the prepared baking dish. Season the fillets with a pinch of salt and pepper on both sides.

  • Spoon the Parmesan mixture evenly over each fillet, pressing gently to ensure it sticks.

  • Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

  • Serve with lemon wedges on the side for extra freshness.

Notes

  • To make the crust crispier, broil the fish for the last 2-3 minutes of cooking.

  • Add herbs like thyme, oregano, or basil to the Parmesan mixture for more flavor.

  • For a spicy kick, include a pinch of red pepper flakes in the breadcrumb mixture.

  • Substitute with haddock, tilapia, or salmon for a different flavor, adjusting cooking time as needed.
