Description

Avocado popsicles are a creamy, refreshing, and nutritious frozen treat made with ripe avocados, coconut milk, and a hint of lime. Perfect for a healthy, guilt-free dessert or snack.

Ingredients

  1. 2 ripe avocados
  2. 1/2 cup coconut milk (or any milk of choice)
  3. 2 tablespoons honey or maple syrup (optional)
  4. Juice of 1 lime
  5. 1/2 teaspoon vanilla extract (optional)
  6. A pinch of salt

Instructions

Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.

  1. Add the coconut milk, honey or maple syrup (if using), lime juice, vanilla extract (if using), and a pinch of salt.
  2. Blend until smooth and creamy.
  3. Pour the mixture into popsicle molds and insert sticks.
  4. Freeze for at least 4 hours, or until completely frozen.
  5. To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.

Notes

  1. For a fruity twist, add fresh fruit like mango, strawberries, or blueberries to the mixture before blending.
  2. For a chocolate version, add cocoa powder or melted dark chocolate to the blender.
  3. Ensure that the popsicle molds are coated lightly with cooking spray to prevent sticking.
  4. Store leftovers in the freezer for up to 2 weeks.
