Description

Delicious and creamy Avocado Cheesecake Bars featuring a crunchy graham cracker crust, smooth avocado-infused cheesecake filling with a hint of lime, and chocolate chips for added texture. Perfect as a refreshing dessert or a sweet treat for gatherings.

Ingredients

Graham Cracker Crust

  • 1 ¼ cups graham cracker crumbs
  • ¼ cup sugar
  • 5 tbsp butter, melted

Avocado Cheesecake Filling

  • 16 oz cream cheese
  • 2 California avocados, peeled and pitted
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • 1 cup powdered sugar
  • ¼ cup coconut milk
  • 1 cup chocolate chips

Instructions

  1. Prepare the Graham Cracker Crust: In a large bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until the mixture resembles a coarse crumble.
  2. Form the Crust: Press the crumb mixture evenly into the bottom of a parchment paper-lined 9″ x 13″ baking dish to form the crust layer.
  3. Freeze the Crust: Place the crust-lined dish in the freezer for 10 minutes to set firmly.
  4. Mix Cheesecake Filling: In a large bowl, add cream cheese, peeled and pitted avocados, lime juice, and lime zest. Use an electric hand mixer or stand mixer to combine the ingredients until smooth.
  5. Add Sweeteners and Milk: Incorporate powdered sugar and coconut milk into the mixture and blend again until the filling is creamy and well combined.
  6. Fold in Chocolate Chips: Use a spoon to gently hand mix the chocolate chips into the cheesecake filling to distribute evenly.
  7. Assemble the Bars: Remove the crust from the freezer and evenly spread the avocado cheesecake filling on top.
  8. Freeze the Assembled Bars: Place the tray back into the freezer for at least 4 hours to allow the cheesecake to set completely.
  9. Serve: Remove the bars from the freezer 15-20 minutes before serving to soften slightly for easy slicing.
  10. Cut and Enjoy: Slice into bars and serve chilled for a refreshing dessert.

Notes

  • Ensure the avocados are ripe for the creamiest texture.
  • Use a parchment-lined baking dish for easy removal of the bars.
  • Allow bars to thaw slightly before cutting to avoid cracking.
  • Optional: Substitute chocolate chips with nuts or dried fruits for variation.
  • Store leftover bars in the freezer for up to one week.
