Ingredients

  • 2 ripe avocados, mashed
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 eggs
  • 1 tsp baking powder

  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ¾ cup milk or buttermilk
  • 1 tbsp lemon or lime juice

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. Mash Avocados: Mash avocados until smooth and mix with lemon or lime juice to prevent browning.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream Butter & Sugar: Beat butter (or oil) with sugar until light and fluffy.
  5. Add Eggs & Vanilla: Mix in eggs one at a time, then stir in vanilla extract.
  6. Combine Wet Ingredients: Fold mashed avocado into the mixture, then add milk or buttermilk.
  7. Incorporate Dry Ingredients: Gradually mix the dry ingredients into the wet ingredients until just combined.
  8. Bake: Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool & Serve: Let the cake cool before slicing. Optionally, dust with powdered sugar or top with frosting.
