Ingredients
- 2 ripe avocados, mashed
 - 2 cups all-purpose flour
 - 1 cup sugar
 - 2 eggs
 - 1 tsp baking powder
 - ½ tsp baking soda
 - ¼ tsp salt
 - 1 tsp vanilla extract
 - ¾ cup milk or buttermilk
 - 1 tbsp lemon or lime juice
 - ½ cup butter (or oil)
 
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Grease and flour a cake pan.
 - Mash Avocados: Mash avocados until smooth and mix with lemon or lime juice to prevent browning.
 - Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
 - Cream Butter & Sugar: Beat butter (or oil) with sugar until light and fluffy.
 - Add Eggs & Vanilla: Mix in eggs one at a time, then stir in vanilla extract.
 - Combine Wet Ingredients: Fold mashed avocado into the mixture, then add milk or buttermilk.
 - Incorporate Dry Ingredients: Gradually mix the dry ingredients into the wet ingredients until just combined.
 - Bake: Pour the batter into the prepared pan and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
 - Cool & Serve: Let the cake cool before slicing. Optionally, dust with powdered sugar or top with frosting.
