Ingredients
4 boneless, skinless chicken breasts
6 oz brie cheese, sliced
1/2 cup apricot preserves
1 tablespoon Dijon mustard
1 tablespoon olive oil

Instructions
- Preheat the oven to 375°F (190°C).
 - Season the chicken breasts with salt and pepper.
 - Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
 - Transfer the seared chicken to a baking dish.
 - Place slices of brie cheese over each piece of chicken.
 - In a small bowl, mix the apricot preserves and Dijon mustard until combined.
 - Spoon the apricot glaze over the chicken and brie.
 - Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
 - Garnish with fresh thyme if desired and serve immediately.
