Description

Apple Strudel is a traditional European pastry made with thin layers of buttery dough wrapped around a warmly spiced apple filling. With a flaky exterior and soft, juicy interior, it’s a comforting dessert perfect for any occasion.


Ingredients

  1. 34 Granny Smith apples, peeled, cored, and thinly sliced
  2. 1/4 cup granulated sugar
  3. 2 tbsp brown sugar (optional)
  4. 1 tsp ground cinnamon
  5. 1/4 tsp ground nutmeg (optional)
  6. 1 tbsp lemon juice
  7. 1/4 cup raisins (optional)
  8. 2 tbsp rum or water (for soaking raisins, optional)
  9. 1/4 cup chopped walnuts or almonds (optional)
  10. 68 sheets phyllo dough (or strudel dough)
  11. 1/4 cup unsalted butter, melted (for brushing)
  12. 1/4 cup plain breadcrumbs
  13. Powdered sugar, for dusting

Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  1. If using, soak raisins in rum or warm water for 10–15 minutes, then drain.
  2. In a large bowl, toss sliced apples with lemon juice, granulated sugar, brown sugar (if using), cinnamon, nutmeg, raisins, and chopped nuts. Let sit to release juices.
  3. On a clean kitchen towel, lay out one sheet of phyllo dough and brush with melted butter. Repeat layering 5–6 more sheets, brushing each with butter.
  4. Sprinkle breadcrumbs evenly over the top layer to help absorb moisture.
  5. Spoon the apple mixture in a line along one edge of the phyllo, leaving space around the edges.
  6. Use the towel to gently roll the dough over the filling into a log shape, tucking in the ends as you go.
  7. Place the strudel seam-side down on the prepared baking sheet and brush the top with remaining melted butter.
  8. Bake for 35–40 minutes, or until golden brown and crisp.
  9. Let cool slightly before dusting with powdered sugar and slicing to serve.

  1. Use tart apples like Granny Smith for the best flavor and texture.
  2. Keep phyllo sheets covered with a damp cloth to prevent drying out.
  3. Breadcrumbs are essential to prevent a soggy crust.
  4. For added flavor, try soaking raisins in spiced rum.
