Ingredients
Dry Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
Wet Ingredients
- 1 cup vegetable oil
- 3/4 cup sugar
- 3/4 cup dark brown sugar
- 1 cup unsweetened applesauce
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
Additional
- 2 1/2 cups chopped apples
- Butter (for greasing pans)
- Parchment paper (for lining pans)
Instructions
- Preheat and Prepare Pans: Set the oven rack in the center position and preheat your oven to 350°F (175°C). Grease the bottom and sides of two 8-inch cake pans with butter, then line the bottom with parchment paper. Alternatively, you can use one 9×12-inch rectangular pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cardamom until well combined. Set aside.
- Combine Wet Ingredients: In a medium bowl, whisk together the vegetable oil, sugar, dark brown sugar, applesauce, eggs, and vanilla extract. Stir well to make sure there are no clumps of brown sugar.
- Blend Wet and Dry Mixtures: Pour the wet ingredient mixture into the bowl with the dry ingredients. Using a spatula, gently mix until just combined to avoid overmixing.
- Add Apples: Fold the chopped apples into the batter carefully with a rubber spatula, distributing them evenly.
- Fill Pans: Divide the batter evenly between the prepared pans and spread it out smoothly.
- Bake: Place the pans in the preheated oven and bake for 30 to 40 minutes. Test doneness by inserting a toothpick into the center; it should come out clean or with only dry crumbs attached. Test multiple spots to ensure even baking.
- Cool: Let the cakes cool in their pans for 10 minutes, then carefully turn them out onto wire racks to cool completely.
- Serve: Enjoy the cake plain or frost the layers with your choice of frosting before serving.
Notes
- Using room temperature eggs helps the batter mix more evenly.
- Chopped apples add moisture and natural sweetness, but feel free to peel them if you prefer.
- For a richer cake, you may frost with cream cheese or vanilla buttercream frosting.
- Ensure not to overmix the batter to keep the cake tender and light.
- The cake keeps well stored in an airtight container for up to 3 days at room temperature, or can be refrigerated for up to a week.
