Ingredients
Base
- 1 apple (Honeycrisp or Pink Lady recommended)
Topping
- ⅓ cup unsweetened shredded coconut
- 3 tablespoons almond butter or cashew butter (or any seed butter of choice)
- ½ tablespoon maple syrup
Chocolate Drizzle
- 2 tablespoons chocolate chips
- ½ teaspoon coconut oil
Instructions
- Prepare the Apples: Slice the apple into ¼-inch thick pieces and carefully core each slice, aiming to get 3-4 slices depending on the apple size.
- Make the Coconut Mixture: In a bowl, combine the shredded coconut, almond or chosen nut butter, and maple syrup. Mix thoroughly until you have a consistent mixture that will hold together well.
- Assemble the Topped Apples: Spoon and spread the coconut mixture evenly on top of each apple slice, creating a generous layer.
- Prepare for Chocolate Drizzle: Line a tray or plate with parchment paper and place the topped apple slices on it.
- Melt Chocolate: Gently melt the chocolate chips together with coconut oil using a microwave or double boiler until smooth.
- Drizzle Chocolate and Chill: Use a spoon to drizzle the melted chocolate over each apple slice. Place the tray in the freezer for about 5 to 10 minutes until the chocolate is firm and set.
Notes
- For best results, choose firm apples like Honeycrisp or Pink Lady that hold their shape.
- You can substitute almond butter with any other nut or seed butter according to preference or dietary needs.
- Use unsweetened shredded coconut to keep the sweetness balanced and avoid extra sugars.
- Optional: Add a pinch of sea salt on top of the chocolate drizzle for a sweet-salty flavor contrast.
- Store leftovers in the refrigerator to keep the chocolate firm and apples fresh.
