  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter or cashew butter (or any seed butter of choice)
  • ½ tablespoon maple syrup

Chocolate Drizzle

  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil


Instructions

  1. Prepare the Apples: Slice the apple into ¼-inch thick pieces and carefully core each slice, aiming to get 3-4 slices depending on the apple size.
  2. Make the Coconut Mixture: In a bowl, combine the shredded coconut, almond or chosen nut butter, and maple syrup. Mix thoroughly until you have a consistent mixture that will hold together well.
  3. Assemble the Topped Apples: Spoon and spread the coconut mixture evenly on top of each apple slice, creating a generous layer.
  4. Prepare for Chocolate Drizzle: Line a tray or plate with parchment paper and place the topped apple slices on it.
  5. Melt Chocolate: Gently melt the chocolate chips together with coconut oil using a microwave or double boiler until smooth.
  6. Drizzle Chocolate and Chill: Use a spoon to drizzle the melted chocolate over each apple slice. Place the tray in the freezer for about 5 to 10 minutes until the chocolate is firm and set.
