Ingredients

Instructions
- Preheat Oven: Preheat your oven to 220°C (200°C fan/450°F) to ensure it is hot enough for the puff pastry to rise and brown beautifully.
- Prepare Apple Mixture: In a bowl, toss the finely chopped apples with lemon juice, cinnamon, and 30 g (2 tbsp) demerara sugar until all the pieces are well coated, enhancing flavor and preventing browning.
- Cut Puff Pastry: Roll out one sheet of puff pastry and slice it in half along the shorter edge. Then slice each half three times along the longer edge to yield six equal rectangles for individual pastries.
- Fill Pastry Sections: Spoon a small amount of the apple mixture into the center of each pastry rectangle to evenly distribute the filling.
- Shape Pastries: Fold each pastry rectangle over to form a triangle, then firmly pinch the edges together to seal the apples inside, preventing leakage during baking.
- Seal and Prepare for Baking: Press a fork along the seams for a decorative finish and extra sealing. Optionally, trim the edges with a sharp knife for a neater appearance, then place pastries on a baking sheet.
