Filling
- 3 Apples (approximately 300 g total, peeled and grated)
- ¼ cup Cane sugar
- 1 Tbsp Pumpkin spice (or cinnamon)
Wrapping
- 8 Rice paper sheets
- Oil spray (for frying or baking)
Instructions
- Prepare the filling: Wash and peel the apples. Using a large-hole cheese grater, grate the apples finely.
- Cook the filling: In a small saucepan, combine the grated apples, cane sugar, and pumpkin spice. Heat over low to medium heat, stirring occasionally until the sugar dissolves and the apples soften. Remove from heat and let cool completely.
- Soften the rice paper: Gently submerge each rice paper sheet in warm water briefly until pliable but not overly soft (usually 10-15 seconds). Remove and place on a dry, smooth surface.
- Fill and roll: Place about 1-2 tablespoons of the cooled apple filling in the lower third center of the rice paper. Fold the sides tightly towards the middle, then fold the bottom edge up over the filling. Tuck the filling tightly using your fingers, and roll the spring roll upward to seal.
- Cook the spring rolls by pan-frying: Preheat a frying pan over medium heat and spray lightly with oil. Fry the spring rolls, turning gently with tongs, until all sides are crispy and slightly bubbly.
- Alternatively, bake the spring rolls: Preheat the oven to 395°F (202°C). Arrange the spring rolls on a baking sheet lined with parchment paper or a non-stick mat. Lightly spray with oil. Bake for 10-15 minutes, flipping after 10 minutes to ensure crispness. Do not wait for color change as rice paper does not brown significantly.
