Description
Apple Hand Pies are individual-sized pastries filled with spiced apple filling, wrapped in a flaky, buttery crust. These portable treats offer all the flavors of traditional apple pie in a convenient, handheld form—perfect for snacks, parties, or lunchboxes.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6–8 tbsp ice water
- 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp cornstarch (or flour)
- 1 egg, beaten (for egg wash)
- Optional: coarse sugar for topping
- Optional: powdered sugar and milk or apple cider for glaze
Instructions
In a large bowl, mix flour, sugar, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until dough comes together. Divide in half, flatten into disks, wrap in plastic, and chill for at least 30 minutes.
- While dough chills, prepare the filling: cook diced apples with brown sugar, cinnamon, nutmeg, and cornstarch in a saucepan over medium heat until softened and thickened. Let cool completely.
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out chilled dough on a floured surface to about 1/8-inch thickness. Cut into 4- to 5-inch circles or squares.
- Spoon a tablespoon or so of apple filling onto the center of each piece. Fold dough over to form a half-moon or rectangle. Press edges with a fork to seal and cut a small vent on top.
- Brush each pie with egg wash and sprinkle with coarse sugar, if desired.
- Bake for 20–25 minutes, or until golden brown and flaky.
- Let cool slightly before serving. Drizzle with glaze if using.

- Use store-bought pie crust for a quicker version.
- Pre-cooking the apples prevents soggy filling.
- Freeze unbaked hand pies and bake straight from frozen.
