Description

Apple Crumble Cake is a moist, spiced cake filled with tender apple pieces and topped with a buttery, cinnamon crumble. It’s a delicious cross between a coffee cake and a fruit dessert, perfect for breakfast, brunch, or cozy afternoons.

Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1 1/2 tsp baking powder
  3. 1/4 tsp salt
  4. 1 tsp ground cinnamon
  5. 1/4 tsp ground nutmeg (optional)
  6. 1/2 cup unsalted butter, softened
  7. 3/4 cup granulated sugar
  8. 2 large eggs
  9. 1 tsp vanilla extract
  10. 1/2 cup milk or buttermilk
  11. 2 cups peeled and chopped apples (Granny Smith, Honeycrisp, or Fuji)

For the crumble topping:

  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • Optional: 1/4 cup rolled oats or chopped nuts

Instructions

Preheat oven to 350°F (175°C). Grease and line an 8×8-inch or 9-inch round cake pan with parchment paper.

  1. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  3. Alternately add the dry ingredients and milk to the creamed mixture, mixing just until combined.
  4. Fold in the chopped apples and pour the batter into the prepared pan, smoothing the top.
  5. To make the crumble topping, mix flour, brown sugar, and cinnamon in a bowl. Add cold butter and mix with your fingers or a pastry cutter until crumbly. Stir in oats or nuts if using.
  6. Sprinkle the crumble evenly over the batter.
  7. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the topping is golden.
  8. Let cool for at least 15 minutes before slicing and serving.

Notes

  • Use a mix of apple varieties for deeper flavor.
  • Chill the crumble topping before sprinkling for extra crispness.
  • Drizzle with powdered sugar glaze or caramel for a finishing touch.
  • Substitute half the flour with whole wheat for a heartier cake.
  • The cake stays moist and delicious for days—great for make-ahead baking.
