Description
Apple Crumble Cake is a moist, spiced cake filled with tender apple pieces and topped with a buttery, cinnamon crumble. It’s a delicious cross between a coffee cake and a fruit dessert, perfect for breakfast, brunch, or cozy afternoons.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg (optional)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk or buttermilk
- 2 cups peeled and chopped apples (Granny Smith, Honeycrisp, or Fuji)
For the crumble topping:
- 3/4 cup all-purpose flour
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 cup cold unsalted butter, cubed
- Optional: 1/4 cup rolled oats or chopped nuts
Instructions
Preheat oven to 350°F (175°C). Grease and line an 8×8-inch or 9-inch round cake pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
- Alternately add the dry ingredients and milk to the creamed mixture, mixing just until combined.
- Fold in the chopped apples and pour the batter into the prepared pan, smoothing the top.
- To make the crumble topping, mix flour, brown sugar, and cinnamon in a bowl. Add cold butter and mix with your fingers or a pastry cutter until crumbly. Stir in oats or nuts if using.
- Sprinkle the crumble evenly over the batter.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the topping is golden.
- Let cool for at least 15 minutes before slicing and serving.
Notes
- Use a mix of apple varieties for deeper flavor.
- Chill the crumble topping before sprinkling for extra crispness.
- Drizzle with powdered sugar glaze or caramel for a finishing touch.
- Substitute half the flour with whole wheat for a heartier cake.
- The cake stays moist and delicious for days—great for make-ahead baking.
