Description
Apple cinnamon crumb cake is a tender, spiced cake loaded with fresh apples and topped with a buttery, cinnamon-sugar crumb topping. It’s perfect for breakfast, brunch, or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 cup milk or buttermilk
- 1 tsp vanilla extract
- 2 cups apples (Granny Smith, Honeycrisp, or a mix), peeled and diced
- For the crumb topping:
- 3/4 cup all-purpose flour
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 cup cold unsalted butter, cubed
- Optional glaze:
- 1/2 cup powdered sugar
- 1–2 tbsp milk or cream
- 1/4 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
- Make the crumb topping: In a bowl, mix flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
- Prepare the cake batter: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, granulated sugar, and brown sugar.
- In another bowl, whisk eggs, milk, oil, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the diced apples gently.
- Pour the batter into the prepared pan and spread evenly. Sprinkle the crumb topping evenly over the batter.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly before adding glaze or dusting with powdered sugar.
- Optional glaze: Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cake.
Notes
- For extra crunch, add chopped pecans or walnuts to the crumb topping.
- Use apple pie spice instead of cinnamon for deeper flavor.
- This cake stays moist for days and tastes great even without the glaze.
- You can double the crumb topping for a thicker, bakery-style finish.
