Ingredients

  1. 2 cups all-purpose flour
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda

  5. 1 tsp ground cinnamon
  6. 1/2 cup granulated sugar
  7. 1/2 cup brown sugar
  8. 2 large eggs
  9. 1/2 cup vegetable oil or melted butter
  10. 1 cup milk or buttermilk
  11. 1 tsp vanilla extract
  12. 2 cups apples (Granny Smith, Honeycrisp, or a mix), peeled and diced
  13. For the crumb topping:
  14. 3/4 cup all-purpose flour
  15. 1/3 cup brown sugar
  16. 1 tsp ground cinnamon
  17. 1/4 cup cold unsalted butter, cubed
  18. Optional glaze:
  19. 1/2 cup powdered sugar
  20. 12 tbsp milk or cream
  21. 1/4 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.

  1. Make the crumb topping: In a bowl, mix flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
  2. Prepare the cake batter: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, granulated sugar, and brown sugar.
  3. In another bowl, whisk eggs, milk, oil, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the diced apples gently.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle the crumb topping evenly over the batter.
  7. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool slightly before adding glaze or dusting with powdered sugar.
  9. Optional glaze: Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cake.
