Ingredients
- 2 cups graham cracker crumbs (or digestive biscuits, crushed)

Instructions
Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until combined and press firmly into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat cream cheese until smooth. Add granulated sugar, vanilla extract, sour cream, and eggs one at a time, mixing well after each addition until creamy.
- Pour the cheesecake batter over the prepared crust and smooth the top evenly.
- In a separate bowl, mix diced apples with brown sugar, cinnamon, and nutmeg. Evenly distribute the apple mixture over the cheesecake layer.
- For the streusel topping, combine flour, oats, brown sugar, cinnamon, and melted butter. Mix until crumbly and sprinkle evenly over the apple layer.
- Bake in the preheated oven for 45–50 minutes, or until the center is set and the topping is golden brown.
- Allow to cool at room temperature, then refrigerate for at least 3 hours before slicing into bars.

- Chilling the bars enhances flavor and makes slicing easier.
