Description

Apple Cheesecake Bars are a rich and creamy dessert layered with a buttery graham cracker crust, spiced apple filling, smooth cheesecake, and a crunchy oat streusel topping. Perfect for fall gatherings or any time you crave a sweet treat.


Ingredients

  1. 2 cups graham cracker crumbs (or digestive biscuits, crushed)
  2. 1/2 cup unsalted butter, melted
  3. 1/4 cup granulated sugar
  4. 16 oz cream cheese, softened
  5. 2 large eggs
  6. 1 tsp vanilla extract
  7. 1/2 cup sour cream

Instructions

Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until combined and press firmly into the bottom of the prepared pan to form the crust.
  2. In a large mixing bowl, beat cream cheese until smooth. Add granulated sugar, vanilla extract, sour cream, and eggs one at a time, mixing well after each addition until creamy.
  3. Pour the cheesecake batter over the prepared crust and smooth the top evenly.
  4. In a separate bowl, mix diced apples with brown sugar, cinnamon, and nutmeg. Evenly distribute the apple mixture over the cheesecake layer.
  5. For the streusel topping, combine flour, oats, brown sugar, cinnamon, and melted butter. Mix until crumbly and sprinkle evenly over the apple layer.
  6. Bake in the preheated oven for 45–50 minutes, or until the center is set and the topping is golden brown.
  7. Allow to cool at room temperature, then refrigerate for at least 3 hours before slicing into bars.
