Description

Angel Food Cake is a light, fluffy, and airy cake made with egg whites, sugar, and flour. With its delicate texture and subtle sweetness, it’s the perfect dessert for any occasion.


Ingredients

  1. 1 1/4 cups cake flour (do not use all-purpose flour)
  2. 1 1/2 cups granulated sugar
  3. 1/4 teaspoon salt
  4. 12 large egg whites (at room temperature)
  5. 1 teaspoon cream of tartar
  6. 1 teaspoon vanilla extract
  7. 1/2 teaspoon almond extract (optional)
  8. 1/4 cup granulated sugar (for folding into egg whites)
  9. 1/4 teaspoon salt (for egg whites)

Instructions

Preheat your oven to 350°F (175°C). Do not grease the angel food cake pan.

  1. Sift the cake flour, sugar (1 1/2 cups), and salt together twice to aerate.
  2. Beat egg whites on medium speed until foamy. Add cream of tartar and beat until soft peaks form. Gradually add 1/4 cup sugar and 1/4 teaspoon salt, continuing to beat until stiff, glossy peaks form.
  3. Gently fold in vanilla and almond extracts (if using). Carefully fold in the sifted flour mixture, a little at a time, without deflating the egg whites.
  4. Pour the batter into an ungreased 10-inch tube pan. Smooth the top with a spatula.
  5. Bake for 35-40 minutes, until the top is golden brown, and a toothpick comes out clean. Tent with foil if the top is browning too quickly.
  6. Invert the pan onto a cooling rack and cool completely in the pan to prevent collapsing.
  7. Once cooled for at least 1 hour, run a knife around the edges to loosen the cake and carefully remove it from the pan.
  8. Serve the cake as is or top with whipped cream, fresh berries, or chocolate drizzle. Enjoy!

  • For extra flavor, add citrus zest or vanilla bean seeds to the batter.
  • Pair with fresh seasonal fruits like strawberries or raspberries for a refreshing topping.
  • If making a vegan version, use aquafaba instead of egg whites.
