Description

Amaretto cherries with dumplings is a cozy, elegant dessert made with sweet-tart cherries simmered in an almond-scented syrup and topped with fluffy dumplings. The warm notes of Amaretto liqueur and tender dumplings make it a perfect comfort treat.


Ingredients

  • 4 cups cherries (fresh or frozen, pitted)
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp cornstarch
  • 2 tbsp Amaretto liqueur
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar (for dumplings)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, cold and cut into small cubes
  • 1/2 cup milk


Instructions

  1. In a large saucepan, combine cherries, 1/2 cup sugar, water, and cornstarch. Stir over medium heat until mixture thickens.
  2. Add Amaretto, lemon juice, and vanilla extract. Reduce heat and let simmer gently.
  3. In a separate bowl, mix flour, 1 tbsp sugar, baking powder, and salt.
  4. Cut in butter until mixture resembles coarse crumbs.
  5. Add milk and stir just until combined. Do not overmix.
  6. Drop spoonfuls of dumpling dough over the simmering cherry mixture.
  7. Cover the pot tightly with a lid and steam over low heat for 15 minutes. Do not lift the lid.
  8. Check that dumplings are cooked through. Remove from heat and let sit for 5 minutes.
  9. Serve warm, spooning cherries and syrup over each dumpling.

Notes

  • Use almond extract in place of Amaretto for a non-alcoholic version.
  • Do not overmix the dumpling dough—this keeps them light and fluffy.
  • Use foil or a baking sheet if your pot doesn’t have a lid.
  • Cherries can be fresh or frozen; no need to thaw frozen ones.
