Description

These Almond Flour Thumbprint Cookies are a delicious, gluten-free treat made with almond flour, ghee, and sweetened naturally with maple syrup. Soft and buttery with a sweet jam center, they make the perfect snack or dessert for those seeking a refined sugar-free, grain-free option.

Ingredients

Cookie Dough

  • 1 cup finely ground almond flour (packed)
  • 3 Tablespoons ghee (softened butter or vegan butter; Earth Balance recommended)
  • 3 Tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Filling

  • 3 Tablespoons jam (homemade or store-bought)

Instructions

  1. Preheat oven: Preheat your oven to 350°F to ensure it reaches the proper temperature for baking the cookies evenly.
  2. Prepare baking sheet: Line a baking sheet with parchment paper or use an ungreased baking stone to prevent the cookies from sticking and help them bake uniformly.
  3. Mix dough: In a small bowl, combine the almond flour, softened ghee (or butter), maple syrup, vanilla extract, and salt. Stir continuously until a cohesive dough forms; it may seem dry at first, but keep mixing until all ingredients are fully incorporated.
  4. Shape cookies: Using a tablespoon, scoop out portions of dough and roll each into a ball. Place them spaced evenly on the prepared baking sheet. Press your thumb or finger into the center of each ball to create an indentation for the jam.
  5. Add jam: Spoon 1/2 to 1 teaspoon of your chosen jam into the thumbprint indentation in each cookie.
  6. Bake cookies: Bake the cookies in the preheated oven for 10-12 minutes, until the bottoms begin to turn golden brown, indicating they are cooked through.
  7. Cool cookies: Remove the baking sheet from the oven and let the cookies cool on the pan for about 10 minutes to firm up. Then transfer them to a wire rack to cool completely before serving.
  8. Store: Store cooled cookies in an airtight container in the refrigerator for up to one week, or freeze them layered with parchment paper in an airtight container for up to three months.

Notes

  • For a vegan version, use a plant-based butter alternative such as Earth Balance.
  • Choose your favorite jam flavor for variety—homemade or store-bought both work well.
  • Ensure almond flour is finely ground for best texture.
  • Do not overbake to avoid dry cookies; watch for golden-brown bottoms.
  • Cookies can be frozen for longer storage; thaw at room temperature before serving.
