Description

Accordion Potatoes are a fun and flavorful twist on classic roasted potatoes. Thinly sliced potatoes are seasoned with garlic, rosemary, and paprika, baked to crispy perfection, and served with a tender interior. Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons melted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Wash and peel the potatoes. Slice them into thin slices without cutting all the way through, leaving about a ¼ inch at the bottom.
  • Arrange the potatoes on the baking sheet. In a small bowl, whisk together olive oil, melted butter, garlic, rosemary, paprika, salt, and pepper.
  • Brush the oil mixture generously over the potatoes, ensuring the slices are well-coated. Gently fan out the slices to allow seasoning to get between layers.
  • Bake for 40-50 minutes, or until golden brown and crispy. Check doneness by inserting a fork—if it goes in easily, the potatoes are ready.
  • Garnish with chopped parsley before serving if desired.
