Ingredients

  • Cherry tomatoes
  • Feta cheese block
  • Olive oil
  • Garlic (minced)
  • Dried oregano
  • Red pepper flakes
  • Salt and black pepper
  • Pasta of choice (penne, spaghetti, rigatoni)
  • Fresh basil
  • Parmesan cheese (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • Prepare a baking dish, placing cherry tomatoes and feta block in the center.
  • Season with olive oil, garlic, oregano, red pepper flakes, salt, and black pepper. Toss tomatoes to coat evenly.
  • Roast for 25-30 minutes until tomatoes burst and feta softens.
  • Cook pasta as per package instructions; reserve some pasta water.
  • Mash & mix roasted tomatoes and feta to create a creamy sauce.
  • Combine pasta with sauce, adding reserved pasta water if needed.
  • Garnish with fresh basil and Parmesan cheese.
  • Serve immediately and enjoy!
