Ingredients

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

¾ cup unsalted butter, at room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup milk

Red food coloring

Blue food coloring

Buttercream frosting (store-bought or homemade)


Instructions

  • Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  • In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

  • Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.

  • Divide the batter into three bowls. Keep one bowl plain. Add red food coloring to one and blue food coloring to the other.

  • Layer the batters in the cupcake liners: start with red, followed by white, then blue. Swirl slightly with a toothpick.

  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.

  • Cool completely on a wire rack, then top with buttercream frosting and decorate with sprinkles or festive toppings.
