Cookie Dough
- 1 1/2 cups (140g) superfine blanched almond flour
- 3 tbsp (1.5 fl oz/44ml) maple syrup
- 3 tbsp (1.5 fl oz/44ml) melted coconut oil
- 1/4 cup (42g) mini dark chocolate chips
Chocolate Coating
- 2 cups (340g) mini dark chocolate chips
- Optional: 2-3 tsp coconut oil (for thinner, softer coating)
Instructions
- Prepare the Pan: Line a small baking pan with parchment paper and set it aside to prevent the truffles from sticking during freezing.
- Make the Dough: In a large mixing bowl, combine the almond flour, maple syrup, and melted coconut oil. Mix thoroughly until a dough forms that holds its shape when pinched. If the dough is too dry, add a little more maple syrup or coconut oil. Then stir in 1/4 cup of mini dark chocolate chips evenly.
- Form the Truffle Balls: Using a 1 tablespoon cookie scoop, portion the dough and squeeze each piece between your palms to compact it. Roll into smooth balls and place them on the prepared baking sheet. Freeze for 60 minutes or until frozen solid.
- Melt the Chocolate: Place the remaining dark chocolate chips in a microwave-safe bowl and melt in 30-second intervals, stirring between each until smooth. Alternatively, melt the chocolate using a double boiler. For a thinner coating, stir in 2-3 teaspoons of coconut oil.
- Dip the Truffles: Using a dipping tool or fork, coat the frozen dough balls with the melted chocolate, letting excess drip off. Place them back on the parchment-lined tray. Wipe away any excess chocolate puddles for a neat finish. Optionally, add additional chocolate drizzle or toppings as decoration.
- Set and Store: Refrigerate the coated truffles until the chocolate sets. Serve immediately or store any leftovers in an airtight container in the fridge or freezer for longer freshness.
